I am looking to create a very small, (coin battery is the biggest part), led light assembly that needs to have an on off switch and needs to be waterproof or waterproof-able (some type of applied coating). I don't really want to use PCB

I really am pretty new to this stuff but think I get the basic understanding of what a led needs to have it work, but am very unfamiliar with available parts. I can find LED's that might possibly work but the switch is where I'm hitting a wall. Also the waterproofing aspect of the switch depending on the type of switch etc.

Any of y'all have any recommendations?

You could try hacking one of those LED key rings for the enclosure.
